Prosciutto and Fig Salad Board
Serves 4
Ingredients
Dressing:
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- Zest of 1 medium lemon
- 2 Tablespoons fresh lemon juice
- 1 Teaspoon soy sauce
- 1 teaspoon honey
- 1/2 teaspoon fresh cracked black pepper
Salad Board:
- 3 cups chopped lettuce, spinach or arugula
- 8 ounces thinly sliced prosciutto, cut in half or smaller bite sized pieces
- 1 pound figs, halved
- 1 cup crumbled blue cheese
- 1 (4.5 oz) wheel of brie, sliced
- 1/2 cup chopped nuts
Instructions
- Whisk or shake together all the dressing ingredients (olive oil, balsamic vinegar, garlic, lemon zest and juice, soy sauce, honey, and black pepper) and set aside.
- On large serving platter or serving board, lay lettuce greens.
- Layer prosciutto on top, then add figs, blue cheese, brie and nuts.
- If serving later, store the platter in the fridge or wine column.
- Before serving, shake the dressing to combine all ingredients. Then drizzle dressing over the salad before guests serve themselves.
